Pudding” and “brûlée” are similar, but are they different?

What is “pudding”?

A typical “pudding” is a mixture of whole eggs, milk, sugar, and vanilla that is poured over a caramel sauce and steamed. Once baked, it is cooled and removed from the cup, and the caramel sauce is thickened to create an impressive looking sweet.
Incidentally, puddings that are not steamed and baked, but instead are made into a jelly-like consistency using gelatin or other gelling agents, are called “chemical puddings. Most puddings sold in supermarkets are of this type.

What is “Creme Brulee”?

In contrast, “crème brûlée” is a sweet made by steaming a thick custard sauce made of cream, milk, egg yolks, sugar, and vanilla, and caramelizing it with sugar over a gas burner after it cools. By using egg yolks instead of whole eggs, the custard has a smooth, creamy texture without the “plop” that occurs when egg whites coagulate. Furthermore, the addition of fresh cream instead of just milk gives it a milky, rich flavor.
