Today’s pudding.
It is a “thick pudding of heirloom eggs” from bird and egg specialty store Tori Tama.
Tori Tamama is a chicken and egg specialty restaurant operated by Second Arrow Corporation in Shinagawa Ward, Tokyo.
The store was located in the food court on the first floor of the “Mosaic Mall” just outside Center Kita Station in Yokohama City.
They are especially particular about their eggs, which are freshly delivered within two days of being laid directly from their contracted poultry farm.

The pudding is made using “Sagamikko” eggs from Inoue Chicken Farm in Sagamihara City, Kanagawa Prefecture.
Heirloom eggs are a luxury brand, with only about 5% of the eggs produced in Japan.
Flat-raising” is a poultry-raising method in which chickens are kept free on the ground.
Chickens are able to live according to their natural habits by moving freely on the ground, which makes them healthier and produces better eggs.
Its eggs are said to be characterized by a less fishy smell and a rich, umami, and full-bodied egg flavor that can be felt well!

It came with a long plastic spoon that matches the size of the jar.
This pudding is white. It is not pure white, but it is a creamy color that is as close to white as possible.
The texture of the spoonful is sticky and firm. It does not feel like melting.

First, I thought,
Panna cotta”!
I thought the milk flavor was stronger than the egg flavor.
It tastes quite milky, like sizzling thick cream.
I was imagining a strong eggy flavor and it seemed a little different than that, but then again, I love panna cotta as well. This was unexpectedly delicious!
I have never had a “heirloom egg” before, so I guess I couldn’t taste the egg…
And it has a smooth but sticky texture. This is the first pudding with this texture, which is different from hard pudding!
Caramel sauce came out from the bottom.
The amount of caramel sauce is quite small compared to the pudding. It is smooth and gently sweet.
When entwined with the pudding, the pudding became melty and soft, giving it a different taste.
I want to try this pudding again!
