I see! So the gentle sweetness is due to the use of sangen sugar?

The smooth and pliable texture is gelatin and agar agar.

I was very happy because I did not expect to find pudding at a buckwheat noodle restaurant!

The pudding was a nice slurping experience that could be enjoyed even after a full meal of soba noodles.
